2 lbs chicken breasts, diced
1 tablespoon olive oil
1 onion, diced
2 carrots, diced
2 celery stalks, diced
2 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried rosemary
1/4 cup all-purpose flour
2 cups chicken broth
1 cup frozen peas
Salt and pepper to taste

1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter, cold and cubed
3/4 cup buttermilk
Directions
Preheat the oven to 375Ā°F (190Ā°C).
In a large skillet, heat olive oil over medium heat. Add diced chicken and cook until browned on all sides. Remove chicken from skillet and set aside.
In the same skillet, add diced onion, carrots, celery, and minced garlic. Cook until vegetables are softened, about 5-7 minutes.
Stir in dried thyme, dried rosemary, and all-purpose flour. Cook for another 2 minutes.
Gradually pour in chicken broth, stirring constantly to prevent lumps from forming. Bring to a simmer and cook until the mixture thickens.
